After school treat: Triple chocolate muffins recipe

I don’t know about you, but I seem have raised eating monsters since the school holidays. School makes kids hungry, apparently! Before school went back I made a whole heap of recipes up that I could freeze, so that there was always something to grab and throw into lunchboxes {I make Lulu up a lunchbox even though she doesn’t go to school, and she loves it}.

These Triple Chocolate Muffins have frozen perfectly and make the best after school treat. They’re even great served cold in this stinking heat of late. {Winter, you can come back whenever you please}.

After school treat: Triple chocolate muffins recipe

This recipe is adapted from a Nigella Lawson recipe, you can find the Thermomix version here.

Triple Chocolate Muffins Recipe

INGREDIENTS
1 3/4 cups plain flour
2 teaspoons baking powder
1/2 teaspoon bi-carb soda
2 tablespoons cocoa powder
3/4 cup caster sugar
3/4 cup chocolate chips {plus 1/4 cup for putting on top of the muffins}
1 200g block of white chocolate, broken into squares
1 cup milk
1/3 cup vegetable oil
1 egg
1 teaspoon pure vanilla extract

METHOD
♥ Preheat your oven to 180ºC. Place 12 silicon muffin cases on a tray.
♥ Place the flour, baking powder, bi-carb soda, cocoa powder, sugar, 3/4 cup of chocolate chips and white chocolate into a bowl. Mix to combine. Pour in the milk, oil, egg and vanilla and mix until combined.
♥ Spoon the mixture into the muffin cases, and then sprinkle the remaining chocolate chips over the top of the muffins. Place into the oven and bake for 20 minutes, or until cooked through.

  2. Hey Chantelle, I have 2 16year old boys and they are constantly hungry whether it’s holidays or school time. They finish dinner and ask when will dinner be ready? And then, what’s for dessert. So I am constantly looking for things to bake and freeze.
