Treat of the week: Malteser Muffins

Malteser muffins // They're calling your name

I’m all about adding chocolate bars to baking projects. I’ve been making Top Deck cookies for years now, and last year when I made the Snickers Wedding Cake I made Twix cookies for all the guests. It just works. These Malteser Muffins are no different, they work too. More than work actually. I think it’s the sour cream in the batter, but it has a tang that is just irresistible.

I’m not sure if Maltesers are available all around the world, but they’re little balls of malt, which are light and scrumptious. Perfect to eat while movie-watching… or to put in your muffins.

Malteser Muffins

Ingredients

1 1/2 cups plain flour
1 1/2 cups Maltesers, crushed
1/2 cup caster sugar
1 tbs baking powder
1 egg
3/4 cup sour cream
1 tsp vanilla extract
125g butter, melted
1/4 cup milk

Method

♥ Preheat the oven to 180 degrees Celcius. Get out 12 muffin cases {this makes 12 cupcake-sized muffins}.
♥ In a bowl place all the wet ingredients: egg, sour cream, vanilla, butter and milk. Mix to combine.
♥ Add in the dry ingredients: flour, Maltesers, caster sugar and baking powder. Gently fold together.
♥ Pour into your muffin cases, and bake for 20-25 minutes, or until gold brown on top. Remove from oven and set aside to cool.
♥ When cool, ice using the icing recipe below.

Caramel Icing

1 1/2 cups icing sugar
1 tbs milk
2 tbs golden syrup
30g butter, softened

♥ Mix all ingredients together until smooth and spread over your muffin.

  1. These look so good. I totally stand by sour cream in cake. If you’re looking for another real winner, google: ‘Coco the Burlesque Wonder Cake”. Hands down the best chocolate cake ever. Also, Deb’s Cinnamon sour cream cake on Smitten Kitchen is such a good ‘Day Cake’ – as in, have it with anything..

  6. First off, great photo Lacey! She obviously takes after her mum! I am so going to try these – love Maltesers. I love Mars Bars too , and have a favourite Mars Bar Slice recipe. I’m a sucker for Toblerone, and can whizz up a wicked Toblerone Cheesecake in the Thermomix but Caramel Koalas are my all time fave. Can you make a cookie with them?

  7. OMG – I just died and went to malteser muffin heaven! I’m thinking an adult version of these with baileys instead of milk would be amazing? But not sure if it would have the same baking effect or whether it would ruin the recipe?

  8. I am not a fan of Maltesers but my husband and kids are! Will have to make these for them!
    I am really enjoying the new Cadbury Marvellous Creations at them moment!
