This is why you need to make friends with salad.

I’ve been a little uninspired by food lately. Eating is just so… constant, isn’t it? Well the cooking and the thinking of what we’re going to eat. If it was up to me I’d probably eat toast or cereal at every meal. I love beautiful food, but it’s the thought behind it all and the planning, can be uninspiring at times.

So I’ve tried to pull myself into action, to motivate myself to enjoy it a bit again. I’m doing it by using my little herb garden more, creating things with fresh foods and lots of flavour. I’ve made this salad a few times now and it never disappoints. It’s actually substantial enough to be a meal on it’s own, or if you’ve got a bloke in the house – just add steak.

Ingredients

2 x 400g can of chickpeas, drained
1 tbs lemon juice {or the juice of half a lemon – whatever works!}
1 tbs of fresh parsley, chopped
1 tbs of fresh coriander, chopped {I know some people hate this herb, but give it a whirl – or leave it out}
2 tbs of good olive oil
1 garlic clove, crushed
1 red onion, finely diced
1 block of haloumi, sliced {mine was 180g}
100g rocket
24 semi sun-dried tomatoes, chopped roughly

Method

♥ Combine everything into a fancy bowl – except the haloumi and rocket.
♥ Cook the haloumi. If you’re using the BBQ then just put it on the hot plate until it’s brown and turn it over to do the other side. If you’re cooking inside, just put a little oil into a hot pan and then brown on each side. It takes about 2 minutes each side. You want it to be really lovely and golden. Once cooked, season with salt.
♥ Toss rocket through salad and then top with haloumi.

You’ve officially just met one of the nicest salads in town. Play nice. Make friends.

    Yup, I totally get in food funks. When that happens, I tend to default to my patented low calorie grilled cheese sandwiches with some cherry tomatoes thrown on the side and call it a day. This salad looks so delicious! :)

    For me it’s the other way around, I rarely have time to cook as much and as proper dinners as I’d like. Life starts to get a little boring with fish fingers and frozen meals every week… I’ve learnt to love salads, I usually go out and buy a big, tasty salad every day for lunch. But it’s all about the fresh, good quality ingredients that makes a good salad!

    Haloumi is always a winner for me in salads. They may as well be best friends. And for a person who doesn’t eat a lot of cheese – this says a lot. I also have a haloumi on lentil salad topped with tomato salsa – a instant crowd-pleaser.

    Looks yummy. I totally agree with your first words, too – sometimes I am too lazy/discouraged/busy/upset to think about new things to cook and I stay with the normal choices. When my other half asked me how many times are we going to eat chicken again this week something struck me and from now on I am trying to do sth different each day :)

    YUM!!!!!!!!!!!!! I definitely get into a food funk! Especially after a big cooking week or so of baking or party cooking. Then it’s toast and weetbix for dinner for a few days!
    I love making fresh salads like this one. I’m obsessed with haloumi at the moment too, so I will try this combo on the weekend.xo

    i’ve made something similar to this before and it was one of the most amazing tasting salads EVER. i love cooking haloumi on its own too, as a snack! :D

    I can completely relate! Especially ever since I became Vegetarian food is sometimes a chore. I’m so relieved to not be the only one who considers toast or scrambled eggs for dinner when they’re feeling uninspired!

    Definetely have food funks here where the temptation to do something that won’t get a ‘yuck’ response from a 4 year response is very strong. But I refuse to cave and give in. I love haloumi – and so does Miss A so this looks like a winner.

    I’m a breast feeding momma who needs decent food but I am so unmotivated! I’ve eaten pizza three times this week :O I swear it’s just gunna be veggies and salad next week :/
