Thermomix recipe: Really, truly, quite awesome caramel fudge

When I was in high school I used to love two things from the canteen; chicken and lettuce rolls and caramel fudge. I’d eat the roll for lunch, and then slowly, and sneakily devour the fudge through the last two lessons of school in the afternoon. It was only once a month or so, but ever-so-delicious.

Last week when I had lunch with some ladies I was given a few gifts, and inside one of them was fudge {Thank you Samantha}. Now keep in mind that we’d all just had a three-course long lunch and fudge was most definitely not required, but when I got to the airport to check-in I thought I should just do some quality control and see how good it was.

It was gooooood.

Of course it should also come with a warning about eating in moderation because it contains no nutrients whatsoever. What-so-ever. I suggest making a batch and sneaking a few pieces and then quickly gifting them out to anyone remotely deserving.

Thermomix caramel fudge

Sammie kindly said that I could share the recipe from her blog, The Annoyed Thyroid {which I highly suggest you read if you own a Thermomix}.

Thermomix Caramel Fudge

Ingredients

170 g white chocolate
1 can sweetened condensed milk, (not skim)
160 g brown sugar
120 g butter
75 g golden syrup
50 g glucose syrup

Method

♥ Place chocolate {broken into a few pieces} into the TM bowl and chop for 5 seconds on speed 9 and set aside.
♥ Place the rest of the ingredients into TM bowl and cook for 8 minutes on 100C on speed 3 with Measuring Cup OFF. {Sammie says this is really important because you don’t want condensation dripping onto your fudge.}
♥ Scrape the sides and bottom of TM bowl with spatula.
♥ Cook for 20 minutes on Varoma temperature on speed 3 with Measuring Cup OFF.
♥ Add white chocolate to mix and chop for 10 seconds on speed 3-4 to combine. Check chocolate has melted. If you need to, chop again for another 10 seconds.
♥ Line a 20×20 tin with baking paper. Pour the mixture into the tin and leave to cool, and then refrigerate until set. Cut into small squares.

  2. 2 white chocolate frogs with a red frog in the middle. Like a white choc red frog sandwich mmmmmm.

  3. I remember in primary school enjoying jelly cups or chocolate mousse. They came with a little red frog or ripe raspberry on the top. It was later stopped though because of the strict regulations brought into canteens

OMG that recipe looks a lot like (obviously without the thermomix, white chocolate or glucose syrup) the recipe my grandmother used to make and it was to DIE for…. then my Mum would make it for us too. I haven’t had it in years and I can still taste it! No wonder you sneaked a few pieces in at the airport!
