In the Thermomix: Quirky Cooking’s Creamy Chicken & Brown Rice Soup

I love a good chicken soup, and trust me, there can be some bad ones. My favourite chicken soup is this one which I adapted for the Slow Cooker.

Well, that was until I met this one. I put off cooking this chicken soup for a while, because it seemed too complicated with it’s almonds and it’s brown rice. Silly me. It’s easy, and it’s hearty and it feels like you’re doing a yoga class AND a self-development session while eating. It’s THAT good for you.

Ingredients

50g of raw brown rice
50g raw almonds
1 onion, halved
2 garlic cloves
1 stalk of celery, quartered
1 large carrot, quartered
30g olive oil
300g cubed chicken
1 litre water
2 Tbs chicken stock paste or vege stock paste {I used vegetable}
100g raw brown rice
Chopped fresh parsley
100g frozen peas

Method

♥ Place rice in Thermomix bowl and grind for 1 minute on speed 9. Add almonds and grind 20 secs on speed 9. Set these aside.
♥ Place onion, garlic cloves, celery and carrot in the Thermomix bowl and chop for 3 seconds on speed 5. Add oil and cook for 3 minutes, 100 degrees, speed 1.
♥ Add the cubed chicken and cook for 3 minutes at 100 degrees on speed 1.
♥ Add water, stock paste, rice, and ground rice and almonds, and cook for 30 minutes at 100 degrees on reverse, speed 1.
♥ Add parsley and peas, cook another 5 minutes, 100 degrees, reverse, speed 1.

    Oh, I’ll try this one next. If you like chicken and sweet corn soup , it takes 15 minutes to make in the mighty TM… We love it !
