Thermomix Chocolate Birthday Cake

My little girl is three! I can’t believe it was 3 years that I gave birth to her. It some ways it feels like yesterday, and other it feels like so many days have passed since that day… because they have. ? Today I’m sharing the most super easy Thermomix Chocolate cake ever.

Lulu and her cousin T’el had a birthday together, and I was on cake duty. Whenever I make cakes, I always make them weeks ahead and freeze them because no one needs a last minute cake stress when you’re having a party.

Cakes can be stressful, but I kinda take the stress off myself, by making them early… and not really caring too much. I’m not trying to make a masterpiece, just something delicious.

Thermomix Chocolate Birthday Cake

EASY THERMOMIX CHOCOLATE CAKE

Ingredients
180g butter, softened
270g brown sugar
2 free-range eggs
1 1/2 teaspoon bicarb soda
375g full fat milk
335g plain flour
50g cocoa
3 teaspoons baking powder

Method
♥ Preheat oven to 160ºC. Grease and line a round cake tin {the 22 cm width tin is perfect}.
♥ Place the butter and brown sugar into the bowl and mix for 20 seconds on speed 5. Scrape down the sides using the spatula. Mix for 20 seconds on speed 5 again.
♥ Place the eggs in the mixing bowl and mix for 10 seconds on speed 5. Scrape down the sides using the spatula. Add the bicarb soda, milk, flour, cocoa and baking powder to the bowl, and mix for 40 seconds on speed 5. Scrape down the sides, and mix for 20 seconds on speed 9.
♥ Pour the mixture into the cake tin, and place into the oven. Bake for 1 hour, or until cooked {you can tell it’s cooked by testing with a skewer – if it comes out clean after placed in the middle of the cake, it’s cooked!}.

I made three cakes for this final cake, but it was HUGE. And then I just wing my icing. I place around 250g of soft salted butter {I don’t like unsalted}, vanilla, colouring and icing sugar into the Thermomix and just blitz. The cake freezes really well too. It’s a beautiful, easy cake. I used this recipe and adapted it slightly.

I sprinkled Sucre sprinkles at the base of the cake. One tube decorated two cakes with plenty to spare, and they’re just very fun. I also used this cake topper.
