The perfect lunch: Potato & leek soup

Usually when I make a recipe I like to see how I can make it better, and by better I mean healthier or easier. I thought about making this in the slow cooker, and then I thought about cutting back on the butter and a little bit of the cream but I thought again. Yes, it’s indulgent… but boy is it good.

My Ma has been making this soup forEVER, and she’s the sort of cook that follows any recipe to the letter, and I’m the opposite. I’ll jazz things up and change them as I please, but not this recipe. I do as my Ma does.

I’m not a big fan of lunch, maybe because I work from home and I find it boring. I’ll find any excuse to head out so I can grab a bite to eat {you know, check the post office box or something highly important}. Yesterday I was out at the shops, where my favourite places to eat are, but I didn’t spend a cent. I couldn’t wait to get home to my dear soup, and it didn’t disappoint.

So make the soup, but make it to the recipe. Give it a chance as is, because sometimes you can’t improve on perfection.

The perfect lunch: Potato & leek soup

Ingredients

50g butter
3 leeks, rinsed and chopped
1 clove of garlic, chopped
1 brown onion, peeled and chopped
1 stick of celery, chopped
3 medium potatoes, peeled and chopped
3 cups of chicken stock
2 sprigs of thyme
200ml cream

Method

♥ In a large pot over medium heat, place the butter and melt. Add the leeks, garlic, onion and celery. Cook for a few minutes until everything softens slightly.
♥ Add in the potato, chicken stock and the sprigs of thyme. Bring to the boil and cook to 20-30 minutes or until the potato is tender and cooked through.
♥ Remove from the heat, and remove the sprigs of thyme from the pot. Blend until the soup is velvety smooth and perfect. Stir through the cream.

Serve with a buttery white bread roll {because if you’re going to be naughty why not go all the way?}.

  1. My favorite meal is breakfast. The smells of bacon, toasting bread and fresh ground brewed coffee. The best start of the day.

  3. I have made this for dinner tonight. I followed all the instructions however I didn’t add the cream……..it is 4pm and I am going to have an ‘early’ dinner as the taste test was yum! Thanks for sharing x

  4. I followed this to the letter and its really good. Too much cream though, next time I think I’ll use only half that amount as it really takes away from the taste of the vegetables (I tasted before and after adding cream(

  5. Cooked this soup yesterday & having a bowl of it right this minute for lunch. It is yummy – haven’t used cream in mine tho.

  6. got the recipe, home grown leek is about a week away from harvesting…will try it next weekend.
