I didn’t plan on blogging this recipe. I just had spare bananas and wanted to use them up. So I made a cake. Fruit up here is cheap. Cheaper than chips.

This banana cake will make you all kinds of happy.

Why do you really need to make it? It’s moist, has a beautiful texture {I think it’s because of the processing}, is light and it’s the best I’ve ever tasted. Even better than my favourite Simonne Logue banana cake. That’s saying something.

Ingredients

125g butter, softened
1 1/2 cups caster sugar
1 very full cup of very ripe, mashed banana
1/2 teaspoon vanilla extract
2 large eggs
1/3 cup milk
1 tsp lemon juice
1 1/2 cups self-raising flour
1/2 teaspoon bi-carb soda

Method

♥ Preheat oven to 160 degrees celcius. Grease the side and base of a 20cm round tin. Dust with flour.
♥ If you own a food processor, you can prepare the cake in that. If you don’t, like me, prepare it in a bowl and blend with a stick blender.
♥ In a bowl {or food processor} place the butter, sugar, banana, eggs and vanilla. Blend/process for 2 minutes. Add milk and lemon, and blend until combined.
♥ Add flour and bicarb soda. Blend/process until just combined.
♥ Pour batter into tin. Place into oven and bake for 50-60 minutes. Leave to cool on a wire rack.

Cream cheese frosting

90g cream cheese, at room temperature
45g butter, softened
1 2/3 cup icing sugar
1 1/2 tsp lemon juice

♥ Beat cream cheese and butter until combined and creamy. Add in icing sugar and lemon juice and beat until smooth. Spread over cake and enjoy!

  1. Just made this one since I had both some old bananas and a new silicon cake pan to test. Cake turned out ok but needed extra time, I think this was because I accidentally set my oven temp for 150 instead of 160. The batter when I liked the bowl was delicious and it smells pretty good. Can’t wait for it to cool enough to have a piece.

  2. Agree! Very tasty but needed extra 10 minutes. Will cook again tho! I’m not a big fan of icing, I sprinkled walnuts on top before I put it in the oven & I found that with the amount of sugar in the mixture it produced a beautifully caramelised crispy top. Was lovely mmmmmmmmm!!

    • look out, its the recipe police.. If she has altered the recipe a little then no, it’s not the same recipe. There are so many recipe’s out there that similarities will always occur.

      The cake sounds delicious and just the recipe I was looking for to use my old banana’s. Just about to get baking. Thankyou…

  7. How high is the temperature of the oven should you set? Should the oven also be preheated at the same temperature? If so, for how long?

  9. Great cake! Thanks for the recipe.. Super easy to make in a food processor and delicious to eat. Cooking time was spot on for 160c in a normal gas oven. I added a tiny bit more lemon juice in the frosting because I like a little extra tang.

    Anyone wanting a super easy tasty banana cake recipe then, look no further!

    • Did unopened the oven door too early ?
      Did U preheat the oven ?
      Is your oven fan forced ? If yes than reduce the temperature by 10 degrees ?

  10. Ive been able to adapt this banana cake to paleo (Gluten, Dairy & Sugar Free) and it still tastes amazing ! Try adding dried cranberries to the mix once its all blended, SO GOOD. thanks for sharing this recipe 🙂

  11. ZOMG just made this with my thermomix (well, its my mums, but I reckon 5 months overseas means I get to keep it right?) and it is GOOOOOOOOD. I put it in a loaf tin instead but it was still awesome.

  12. Philadelphia Cream Cheese has a ready made lemon frosting which can be substituted if you’re short on time. Tastes good too.
