I love the idea of Valentine’s Day, all the romance and the sweetness. But in reality, we don’t really do anything for the day. We’ll do a nice dinner. I know that I would have gone into our relationship with high hopes for huge romantic gestures. I would have loved to be swept up and away on a romantic date, with flowers and a heartfelt card and a gift… but Hubby isn’t of the traditionally romantic kind. He’d rather surprise me with gifts and things when I least expect them {in other words, NOT Valentine’s Day}. And by ‘least expect them’ I mean every 3 years or so. Just saying.

The way to anyone’s heart is through food, I say. And it’s usually with sweets. You can grab some take out for dinner but the dessert has to be delectable and indulgent…because all desserts are calorie-free on Valentine’s Day. Wink.

These are super easy to make, deliciously light and impressive looking too. Don’t you think they’re cute?

Ingredients

1 ready-prepared sheet of puff pastry
1 punnet of raspberries
2 teaspoons of caster sugar
1 egg, beaten
1 cup thickened cream, whipped {add a little vanilla and icing sugar for extra sweetness if you like}
Icing sugar, for sprinking {confectioner’s sugar in the States}

Method
♥ Turn your oven onto 180 degrees celcius. Line a baking tray with baking paper. Using a ruler and a sharp knife cut the pastry into little squares. I found that 4cm was the perfect size and you can get around 30 from the one sheet.
♥ Place the squares onto a baking tray. Brush with the egg and then sprinkle with the sugar. Cover with another sheet of baking paper and place a tray on top. This is just so that they don’t rise. If you want crumbly pastry, feel free to try it without the tray.
♥ Bake for 15-20 minutes or until golden brown.
♥ Leave to cool.
♥ Once cooled – or when you’re ready to serve – layer the squares with cream, a pastry square on top, a little more cream and then a single raspberry. Place on a platter and then dust with icing sugar.
