Sweet treat: Triple chocolate muffins

I don’t really know how high school works these days, but for me we had to try out a whole host of subjects, and Home Economics was one of them. I quite liked it. What’s not to like about food and cooking? It was really different to cooking at home though. With the teacher constantly looking over our shoulders there was no licking the bowl, no taste-testing and that’s kinda the best bit.

I first made this recipe back at school when I was about 14, and it’s stayed in my recipe collection since then. If you’re a white chocolate fan like me, I strongly suggest skipping the milk chocolate and doubling the white chocolate. So, so good.

Ingredients

90g butter, melted
2 1/2 cups self-raising flour
1/2 cup cocoa
3/4 cup caster sugar
1 egg
1 1/3 cups milk
3/4 cup chopped white chocolate
1/2 cup chopped milk chocolate

Method

♥ Preheat your oven to 180C. Fill 12 hole muffin pan with patty liners. Combine all ingredients in large bowl, stir with metal spoon until just combined. Spoon mixture into prepared cases. Bake in moderately hot oven for about 25 minutes.

  1. Home Economics was one of my favourite subjects, and I love cooking to this day, but I’m still haunted by what our teacher called “Meal in Foil”… These look great though!

  2. I LOVE white chocolate, although when I need a chocolate fix I usually go for flavoured/filled milk chocolate, as white chocolate doesn’t really have that chocolaty taste. And I love double and triple chocolate muffins, I sometimes add a small splash of Baileys in the dough, it makes them extra sweet and cuts the bitterness of the cocoa powder.

    • Oh, and I had to google how to make self raising flour as we just don’t have that in the shops over here.. my head is already buzzing with cups and oz and other measurements that we don’t use, either 🙂

  3. Yum, I’m going to give these a go tomorrow afternoon. Its my baking time and the family hang out each week to see what treat is in store for them. They’ll love these as we’re all chocoholics in this house!

  4. White chocolate is my most favourite chocolate of all…and my most favourite white chocolate is lindt balls….OMG to die for!!!!
