I have a confession to make; I haven’t eaten rice cakes in, oh, about 6 years.

It has been a long time between crackers. And it’s not just rice cakes; it’s all the various crackers found in the biscuit aisle. I must get blindsided by the Tim Tams and skip the savoury section altogether.

It’s not because I don’t like them either. I’m partial to a cracker or two. I’ve just been distracted by the sweet things and forgotten that they even exist! Sigh.

Back in the olden days, when I was about 20, I used to nanny for the sweetest little boy. Oh, he was so sweet. And he had two beautiful parents too. When I went for the position he was just a teeny baby and we {the parents and I} were talking about the package I’d receive in return for looking after their baby. We basically fell in love from the moment we met, and when we talked money the parents threw in, “And we’ll feed you breakfast and lunch too. You can have whatever you like!”

And so, being a 20-something single girl who lived in a share house with a fridge that was basically a no-go zone of various germs and leftover food, it was one of my favourite perks of the job. It’s where I discovered rice cakes. They were stored in the pantry in bulk, and they were my staple for lunch, dinner or an afternoon snack. Sometimes I’d have them with honey, others with vegemite and when I wanted to be truly fancy… well I’d add a little cheese, a slice of meat, some tomato and sprinkling of fancy sea salt. I was living the high life right there.

Fast forward to this past weekend when SunRice sent me out to give them another go. They’d been on my radar for the past couple of weeks because I recently saw a friend post about them on Instagram. She said, “We’re a packaged food-free house usually, but these are the only things we let in.”

I was intrigued. The only thing? I needed to reunite myself with those babies {the rice cakes, not the kid I nannied} of my younger years. And so I did. I went off, collected an array of toppings, a packet of SunRice Thick and Thin Rice Cakes and went on my way – determined to satisfy my little family with a fancy lunch of deliciously topped rice cakes.

Before I start being all fancy-pants and show-offy with my toppings, let me share a discovery. When I got home, I realised one of the main reasons why my Instagram friend allows rice cakes into her home. They contain just one ingredient; whole grain brown rice. No artificial colourings, flavourings or preservatives, just 100% brown rice. And they’re gluten free. Mind blown? Yes, mine too.

So, first up was pleasing my meat pie-loving husband. I tempted him with a little cheese, some finely sliced ham and a juicy slice of tomato – and some cracked black pepper. Verdict = winning.

Then there was me. I’m easily pleased, a little cottage cheese, cherry tomatoes, salt and a basil leaf. Heaven.

This was another winning combination. I made a little tomato mix of cherry tomatoes chopped, red onion, basil, a dash of olive oil and a few drops of balsamic vinegar on a bed of spreadable goats cheese.

So while I was making these creations, it came to my attention that it was quite likely that Lacey had never tried a rice cake. While I made her some simple rice cake toppings, she pulled up a stool and said, “I’ll make my own.” It’s as if she was trying to tell me that she was far too fancy and wasn’t having a piece of my simple ways. So she swiped a little cottage cheese across her rice cake and plonked part of a banana on top. And she ate it, with gusto.

And then along came Ma who also wanted in on the rice cake action. She gathered a few ingredients and whipped up this. It’s made with hummus, salami, roma tomato and basil. She approved of her own creation.

It’s safe to say, rice cakes are back on the menu in our house. I won’t be by-passing the savoury section of the biscuit aisle. Hubby will have goodies for work and most importantly, of course, Lacey has a new treat for her lunchbox.

  1. This is very funny, since I just rediscovered them, after about 5 years of not having them! I’m not fancy, I just love almond butter. (Just wanted to share, even though I’m in the U.S. and probably can’t win anything.)

  2. My fav is spread with cream cheese, top with thinly sliced cucumber, smoked salmon, slivers of red onion, squeeze of lemon and cracked black pepper.

    Our fave topping here is hommus, with thinly sliced mushroom and sundried tomotoes or marinated pepper strips (or both!). Topped with challots if I remember to buy them.
    The best part is when you’ve finished and all the juices and crumbs are on the plate. The kids pick up the plate and lick, but I do the old finger swipe. Never let manners get in the way of delish!

  4. I love a smear of cottage cheese or philly cheese, a slice of smoked salmon, three capers and some cracked pepper, accompanied of course by a glass of cold soda water with some ice!

  5. Might sound boring compared to some of the lovely toppings mentioned, but my fav is curried egg with cracked pepper!! YUMMO!!!

  8. I like to use them on a cheese platter, their size limits how often the three tinlids double dip! Blue cheese and thinly sliced pear (or Maggie Beer’s spiced pear paste – heaven).

  9. Cream cheese, smoked tuna, tomato (out of my garden) a sprinkle of salt and LOTS of cracked black pepper!! YUMMO! OR plain old Peanut Butter, just as yum!

  10. Viva Mexico! taco seasoning marinated sandwich steak, lettuce, diced tomato, cheese, spicy salsa. Mexe-beans when I feel like skipping the meat.

  11. Philly Cream Cheese mixed with John West Lemon Pepper Tuna and topped with a few cashews. Great for lunch or a snack or a sneaky (read – EASY) treat when people pop over unexpectedly!!

    Spread rice cake with Japanese mayo mixed with a bit of wasabi, top with good smoked salmon and thinly sliced avocado.

  14. My favourite topping is, mashed avocado, thinly sliced cheese, topped with roast chicken pieces, a dollop of Tartare Sauce with pepper!

  15. Spread with goats cheese, top with smoked salmon, add some cracked pepper and drizzle with lemon juice and olive oil. Yum.

  17. My Favourtie topping on Rice Cakes is Peanutbutter, then on top of that Banana sliced thinly then honey trickled over the top; ~ bliss, kids adore it also, mmm!!

  18. This’ll sound completely gross but my boy and I munch down on curried egg and peanut butter rice-cakes. We were introduced to it last year and I was very sceptical. grossed out even. But it tastes like a fluffy, crunchy satay.

  20. Easy! My all time favourite is crunchy peanut butter with banana on top! The mix of textures are amazing AND its dairy free which I need!

  26. Just one? Savoury then, buffalo mozzarella, some ripped up prosciutto and fresh basil. Pop in microwave for 30 seconds. Perfection.

  29. For something a little spicy I’d go for sweet chilli, refried beans, vintage cheddar, freshly made tomato salsa and a dollop of home made guac (avo, natural yoghurt, lemon, S&P). If you’ve got a herb garden, maybe a few basil leaves for prettiness.

  32. Our fave – pizza rice crackers! Tomato paste, a sprinkle of dried oregano, salami and cheese. Microwave for about 20 seconds! Delicious!

  33. i have this everyday. homemade mayo, grated carrot and tasty cheese, sliced cucmumber, 1 slice of tomato and a lettuce leaf

  34. A tiny bit of salad dressing, lettuce, THINLY sliced tomato, THINLY sliced salad onion, black olives. Optional: dollop of “fancy” cottage cheese.

  36. I like to go the whole salad stack – hommus, tomato, egg, ham and lettuce. A little hard to eat as it falls apart a bit but delicious!

  37. I love Bruschetta but the bread always makes me regret it, so with an oven roasted garlic clove crushed, this might be my new love!

  41. Thanks for posing this question – I’d dismissed rice cakes as ‘rabbit food’ but now I have about a billion different topping ideas from all of the comments. I’ll now be lashing my rice cakes with tahini, honey, banana slices and LSA. Yummo!

  42. Cream cheese, avocado, raw salmon, lemon and lime juice,
    cracked pepper and dill. (I sometimes substitute the cream cheese for cottage
    cheese). My absolute FAVOURITE!

  43. For me avocado, chicken, tomato with a little cheese, then I chuck it in the grill and toast it. Toasted rice things are surprisingly brilliant.
    For a snack for my toddler, nothing beat peanut butter and banana. The excitement on fer face when the packet comes out of the cupboard is brilliant.

  44. I love rice cakes we eat them all the time an believe it or not they make awesome crunchy mini pizzas. Just add some tomato paste, a little basil, cold meats (usually ham or turkey) and top with a little cheese. Put it in the oven till the cheese melts an its a healthy and filling afternoon snack that the kids think is the ultimate treat. Pizza for afternoon tea.. yes please!

    For grown ups a pumpkin, feta, baby spinach and pinenut pizza is heaven!

  46. Smoked salmon, cream cheese with a couple of capers on top. To really make your taste buds tango, add a sprinkle of lemon juice!

  47. My fave is to spread a little refried beans, then top with a salsa of cherry tomatoes, red onion and avocado, and a dollop of greek yoghurt on top. Delicious!

  48. We make yummy “pizzas” with rice cakes. We use ham, salami, capsicum, red onion, grated tasty cheese and american mustard or ranch dressing! My kids absolutely love them!

  49. Favourite topping at our house, is avocado and boiled egg, Apply a thick lashing of avocado, then top with mashed boiled egg, salt and pepper to taste. Delicious!

  51. Crispy short cut Bacon, topped with sliced Avocado, chopped Tomato sprinkled with fresh ground black pepper make a BLTRC which is a super healthy version of my old favourite the BLT!!!

    To make it really fast and easy cook the bacon in the sandwich press between two sheets of baking paper!

    Fire up the sandwich press I’m heading for the fridge now…hoping there is some bacon there!!!

  52. My creation would be a delicious yet healthy one of perfectly ripe avo spread on the rice cake followed by some grated cheese, a slice of tomato and a whisper of fresh basil with cracked pepper and salt. Sad I have already had my lunch as I am really keen for it now!

  53. I love rice cakes. For some reason, peanut butter, as a topping really works. For a dessert, peanut topped with banana slices and honey, is delicious

  54. Mix shredded bbq chicken, a stick of finely diced celery and chopped pistachios with sour cream and mayo. Season. Spread liberally! Delish and very moorish!!

  55. Ok, bear with me here, but homemade Mushroom Walnut pate/dip is absolutely wonderful. Its healthy and yes, not the most appetising colour in the world, but tell your kids your giving them mud cakes, sprinkled with chopped tomatoes, or shaved carrot, or some other colourful veggies and watch them scarf it down!

  56. As a vegetarian and a picky eater, these are a real treat for me! I like to top them with a few teaspoons of hummus, some finely chopped cucumber, tomato and capsicum and top with a little pinch of salt and some white pepper. Mmm! Such a delicious snack it feels naughty, but it’s not!!!

  57. A spread made from hard boiled eggs, chopped tomato, pepper and vinegar, and a little salt if liked, all blended with the stick blender is delicious and keeps well in the fridge for several days too.
