  1. Yum! I’ll definitely give these a go. I have to say i’m a sucker for macaroni and cheese. I could eat it all day (which is probably a bad thing)!

  2. My favorite lunch that I make is a salad with tons of ingredients. I add either baked chicken, fish,or brown rice and then tons of veggies. Yesterday I added squash, broccoli, tomatoes, avocado, zucchini, and used oil and vinegar for dressing. OMG it was so stinkin’ good. It’s really hot here right now so salads are a perfect lunch.

  3. I’m going to obsess about these all morning. I have most of a bag of tortilla’s leftover from Sunday nights soft taco dinner. Definitely going to be having this for lunch!

  4. Brilliant! I am sitting here working from home today and starting to wonder what on earth I am going to eat. Now I know. I don’t have sour cream but I find Greek yoghurt works just as well. And I like to throw in a few chilli flakes because that’s what I always do when I don’t have mild-palated children to worry about. 🙂

  5. Toasted sandwich is my favourite and if Im feeling a little fancy Ill go the pita bread toastie like yours, except that I wrap mine and then press it so it squashes it into a rolled but flat wrap, cut on an angle looks just like the cafe ones too!

  6. And right now I am cursing my partner for buying crispy taco shells instead of soft this week so have no tortillas in the house! My fave lunch at home would be thai beef salad, even without the beef! Also love a good couscous salad with leftover roasted veg or whatever else is on hand. But all I want now is Quesadillas!

  7. I make my version of “quesadillas” with Mountain Bread, along with whatever I can find on hand. Today, it was finely shredded leftover ham with mozzarella cheese. The ingredients go on half of the Mountain Bread, fold over, then place under grill until the cheese is melted and the bread has crisped up. Cut into triangular shapes and serve! Super easy and super tasty.
