If you’ve been reading this blog for a little while, you might know that I’ve been off dairy since having Luella… because she gets VERY cranky when I have it. I was totally fine with it. In fact I might have thought it was even a little bit fun to find dairy-free recipes and try non-dairy type foods.
I missed cereal and milk though. I tried oat milk, goat milk, soy milk, almond milk and rice milk and didn’t mind some of them… but I missed my normal milk. But I survived.
My doctor said every month I should try a little dairy again and see how she responds. Each month I did and it resulted in hours of cranky Luella… until this month. I tried a little, no reaction. Hesitantly, I tried a little more… no reaction. And then I started to think about all the dairy I haven’t eaten in forever, chocolate, ice cream, cheese, ALL THE DAIRY.
I’ve been so very restrained. I ate a little of the chocolate gift I didn’t eat at Christmas, I dobbed a little butter on my bread and yesterday I indulged in a spoonful of creamy ice cream and puff pastry. The indulgence will stop here, but it was oh-so-much fun!
I saw this recipe on TV this week, and I had to try it. It’s so easy and it means I can tick making & eating dessert off my list {if you’ve haven’t already, read this post and get ticking too}.
Ingredients
Stewed apples, I just made my own – two peeled, cored and chopped apples in a saucepan with a little water, sugar and some cinnamon until the apples were soft
1/2 a piece of puff pastry
Ice cream, to serve
Method
♥ Heat up your jaffle maker. Cut your puff pastry into squares {if you have a square of puff pastry, just cut it in half and half again}. Place one piece in the jaffle maker, top with apple mix and then place the other pastry piece on top. Close the lid and cook until golden brown {about 4-5 minutes}. Serve with ice cream.
This is absolutely GENIUS!
Today we are going back OFF dairy… at 15 months old. She is so gassy again and we’ve been really slack with the dairy, lots of cheese lately. We still breastfeed so I have to go off it again too. Sigh. Glad you guys can eat it again. Although I don’t think I WANT to eat much dairy ever again even when I can!

Wow. Of course it would be that easy – and way too easy in my books! 🙂 Thanks for the recipe – our jaffle maker can make 4 lots (8 triangles) in one go. And we have heaps of tinned pie apples. Looks like I’ll be doing dessert tonight!
