      We had it with chicken, but anything would be nice. Fish would be perfect!

  5. It’s in the oven as I type this. Thanks I was struggling to decide what to make for dinner! I’ll be serving it up with some eggs (we have had way too many meat dishes these past couple of weeks). definitely(?) mom(m)ent (?) Comment are jsut a few words that make me stop and ask does that look right?

        It was delish!!!!!! My whole family loved it… It is now becoming a regular dish thanks heaps! I am thinking of even making it as a breakfast dish by adding some beaten eggs through it and trying it with chourizo slices through it also (not for brekki though) YUM! Might try it also with carrot to replace the potato since I am insulin resistant potato a big no no for me to eat . I think I remember reading and commenting on a post you mentioned something about insulin resistance. Anywhooo… Thanks again!

        • Hey Alice. That’s great. So glad you liked it.

          Yes, I have severe insulin resistance but my dietitian says potato is OK, as long as I’m having a protein at the same time. I’ve been lax with my diet and my medication since moving. Must get back on it. Not feeling so great! xx

  6. I honesly dont think I’ve had zucchini in anything other than cookies and bread ……… maybe in soup or something like that. But I know I’ve never had it as a main ingredient. This looks very tasty so I will give it a try, anything with cheese and potatoes in it can’t be bad 🙂
    My misspelled word is : Inconvenience , too many “N”s and “E”s I never get it right without spell check.

    The benefit of living in the UK means that we can avoid the spelling and just go with courgette!

    Not food related, but I always struggle to spell ‘attach’ – what’s the deal with that?!

If you like this, there is a similar Greek dish, you chop tomatoes, zucchini, and potatoes in even amounts and sizes, coat with olive oil, cook covered in tin foil at 400 F, for a few hours, until it has the consistency you like, and then serve with feta or goat cheese as a fantastic side dish, though many vegetarians I know eat this as the main dish. I got this from my Greek friend and I don’t know anyone who doesn’t love it. But I have your version in the over right now and I’m sure I’ll love it. I was worried I couldn’t get it to look pretty like yours but its going to be okay, there were many opportunities to fix the pattern as you go around. Hard words, diarrhea (spell check got it actually, I just miss spelled it again).
