Slow Cooker Beef Stroganoff

I do love me a slow-cooker meal and a stroganoff. There’s something comforting about the both of them, so I decided to put the two together and see what happened. You know what happened? A delicious meal that everyone loved. That’s my measure of success, if everyone eats it and likes it… I’m a culinary genius. Winning.

I prefer my stroganoff without the meat. Mushrooms are one of my favourite foods, so quite often I’ll happily make it sans meat and add in some vegetables. This one uses meatballs, which make it a super easy meal for everyone. I just rolled those babies onto Hubby’s plate and enjoyed my mushroom overload. You can do as you please. Instead of beef strips I used meatballs, I just picked up a packet of mini organic meatballs from the supermarket, but I know Aldi does some cheap ones. You could even use the frozen ones from Ikea. Or make your own if you like.

Slow Cooker Beef Stroganoff

Ingredients

1 can of cream of mushroom soup
3/4 cup beef stock {or 3/4 cup water with a beef stock cube}
1 packet of meatballs {around 500g if you’re making your own}
1 onion, sliced
300g mushrooms sliced
1 tbs tomato paste
1 tsp paprika
1 cup sour cream
1 tbs cornflour
Pasta spirals or rice, for serving

Method

♥ If you’re using fresh meatballs {i.e. not frozen} then you might like to brown off the meatballs quickly in a frying pan with a little oil, so that they don’t fall apart during cooking. I did.
♥ In your slow cooker, empty the can of soup, the stock. Add the meatballs, sliced mushrooms, onion, tomato paste and paprika. Stir gently to combine, and then cover. Place on low heat and cook for 6-8 hours.
♥ Half an hour before you’re ready to serve, start cooking your rice of pasta.
♥ Mix the cornflour into the sour cream, and mix into the slow cooker mixture. Cook until your pasta or rice is cooked.
♥ Serve with some greens like broccoli, zucchini and beans.

  1. I am a fan of the slow cooker and do a great Goulash, but unfortunatley Sadie doesn’t like mushy food, so my slow cooker doesn’t get used nearly as much as I would like as i still have to make a seperate meal regardless. This looks tasty though, might have to dust off the slow cooker.

    I think I have the only child in the universe that doesn’t like mashed potato or bolognaise, which seems to be every other mothers back up meal of choice.

  2. I LOVE my slow cooker and quite often do a beef stroganoff in autumn and winter. I use beef instead of meatballs and because it’s slow cooked it’s very tender. Mmm, mmm.

  3. I add my pasta or rice straight into the slow cooker with about 45 minutes to go – no need to dirty another pot!

  4. I LOVE my slow cooker – smelling dinner for hours cooking away on its own! I’ve had my foot in a cast for 6 weeks so I got whoever was visiting at the time to throw everything in the slow cooker and we ate goulash, stroganoff, salsa chicken, butter chicken, lamb and corned meat. ( they all freeze well too!) I haven’t tried lasagne yet but I do hear it’s pretty good.

  5. I need recipes! Having a newborn and nearly 4 year old I want to make the most of my slow cooker, especially now we’re in the cooler months. Anyone have any nice vegetarian meals?

  6. I’ve just returned from the supermarket with all of these ingredients !! Will give it a go tomorrow ! I love making a spagetti bolognese in my slow cooker, I basically do it just like stove top however cooking it slowly makes it have so much more flavour !! Yummo !! Thanks for sharing ! Hx

  7. Thanks for the recipe, may try next week. I love my slow cooker, if they kids don’t see me in the kitchen, they don’t act like they have never seen food before, even though you can smell it cooking. I have tried other recipes before, but none are like the ones hubby remember his mother making (strange as he always says she was an average or less cook)

  8. Well, it’s in the slow cooker, let’s see how it goes tonight! I think the meatballs I’m using are packed full of numbers though, so next time might be time to make my own. Or use casserole beef! Thanks!
