Mid-week meal: Slow cooker baked potatoes

Slow Cooker Baked Potatoes

I know it seems lazy to put potatoes in a slow cooker to cook, but you can’t knock it until you try it. They taste different. Better. They’re one of our favourite dinners. Easy, and delicous, and not messy at all.

Slow Cooker Baked Potatoes

Slow cooker baked potatoes

Ingredients

Large washed potatoes, as many as you have people in your family (for me that’s 3!)
Aluminum foil, to cover

Method

♥ Wash potatoes and dry thoroughly.
♥ Wrap in foil and place into the slow cooker.
♥ Cook on low for 8 hours, or until cooked through.
♥ Once cooked, top with your favourite toppings.

Note: We topped ours with low-fat cheese, sour cream, chives and some bacon.

Another note: You might be asking, do I need to put liquid in that slow cooker? Nope. You don’t. Just the spuds/potatoes in their foil and cook.

What’s your favourite baked potato topping? What would you put on these bad boys?

  1. we do mexican spuds. use taco mince and add guacamole sour cream and salsa on top with a few corn chips

  2. We do these outside in the firepit but I might try them in the slowcooker this weekend for a change! We top ours with mashed avo, sour light cream, chopped up ham, finely chopped onion and tomato. And maybe some grated cheese. It’s so yum!

  3. Fantastic idea!!
We normally top ours with leftover spag bol sauce, some coleslaw and sour cream.
    This is happening this weekend!

  4. I make a meal out of baked potatoes sometimes serving them with chilli or taco meat, salsa and cheese, sometimes serving them with broccoli and cheese topped with a few bacon bits or sunflower seeds, feta cheese with fresh cherry tomatoes and a little oregano……..the options are endless………
