Mid-week meal: Healthy fish & vegetable parcels

One thing that’s on my to-do list is to eat more fish. I love it. Actually we all love it. It would be one of Lacey’s favourite foods. Plus we have a brilliant fish shop just a few minutes walk from our house… so we really need to make more effort. Here’s a super simple recipe I tried over the weekend that will {hopefully} be on our done list at the end of each week…
Ingredients
1 tbs olive oil
4 fillets of thick white fish {we used snapper}
1 small red onion, very thinly sliced
1 large red capsicum, quartered, de-seeded, very thinly sliced
2 zucchini, very finely shredded
60g snow peas, finely shredded
2 tbs olive oil
2 lemons, cut into cheeks or wedges, to serve

Method
♥ Preheat oven to 200 degrees celcius. Heat a non-stick frying pan over a medium heat. When hot add the fish fillets {2 at a time} skin-side up. Cook for 2 minutes or until browned. Transfer to a plate.
♥ Place 4 squares of baking paper onto a flat surface. Place a fish fillet into the centre of each square.
♥ Place onion, capsicum, zucchini and snow peas in a bowl. Toss until well combined. Pile vegetables onto fish fillets.
♥ Drizzle oil over fish and vegetables. {I skipped this part – in the name of healthy eating}. Season with salt and pepper.
Gether baking paper around the fish fillets and secure with kitchen twine. Place parcels onto a baking tray.
♥ Bake in oven for 10-15 minutes or until fish is cooked through. Serve with lemon cheeks.

    I'll definitely be giving those a whirl. My favourite fish is salmon. I love it grilled with a soy/Ginger marinade, it's delicious.

  2. We have a serious salmon love affair in our household. We grill it with a sauce of balsamic vinegar, brown sugar (just a smidge) so it caramelises and goes all sticky and lime juice. Then serve it up on asparagus, cucumber ribbons and some slices of avocado. Quick, easy and delicious

  3. We are a Salmon family too! baked in the oven, served on jasmine rice with Balsamic vinegar, chilli & olive oil dressing & baked tomatoes. Yummo!!
