Make it for one: Three ingredient scone recipe

I like to eat fruits, vegetables and whole foods as much as possible, but my weakness is sweets. I love them, I always have. I also love to bake, but the problem with that is – if I bake a cake… well it needs to be eaten. Quite the dilemma isn’t it?

On Sunday I was craving scones, so I cooked up an idea I had. I knew if I baked a whole batch my willpower wouldn’t just let me stop at one, so I made just one lovely scone. If you’re expecting a friend for afternoon tea, double it and make two… otherwise enjoy alone.

Ingredients
1/2 cup of self-raising flour
1/2 tablespoon icing sugar
2 tablespoons of thickened cream

Method
♥ Preheat oven to 180 degree celcius
♥ Place all ingredients into a small bowl
♥ Mix until all combined
♥ Knead a little {I did it in the bowl roughly because I didn’t want to dirty a bench surface}
♥ Form into a nice round shape {about 5cm wide}
♥ Place on some baking paper on a tray
♥ Brush with a little milk
♥ Bake for 20-25 minutes until golden brown
♥ Enjoy while the baby naps, or before school pick-up, or as an after dinner treat {or whenever basically!}

  1. I could've written the first paragraph of this post myself. I also eat generally healthy, but have had to ban myself from baking, because I can never stop at just one biscuit/brownie/slice of cake.

    This idea is GENIUS. Portion controlled baking – love it.

  4. You are so cute Chantelle! I'm totally adding this to my fave bake list. What a great idea! Half the battle with baking, is the battle with my guilty conscience knowing that hubby and I will undoubtedly scoff the lot! I love baking too, so this one will come in handy for sure :o) xo

  6. This is a such a fab idea Chantelle, I'm like your other commenters, find it hard to stop at one. Luckily I have Huge Teenager who stops me from eating all the cakes and biscuits by getting in there first.

    I am in a phase of making mini-crumbles in ramekins, one for each family member so I am not left with lots of leftover crumble which I nibble up.

    I just love this nurture-yourself and know yourself approach to baking. We mums can have a treat and have just one!

  8. I am so impressed with your restraint Chantelle, but you must have been home alone. There is no way my kids would let me eat a scone without sharing. Lemonade scones are the best. I might have to try your recipe though because there is no way I could stop at one.

  9. Hi Chantelle. Just wondering if the recipe was meant to be 1/4 cup of flour? I made it as above with 1/2 cup of flour, but had to add milk (about 2tbs) because it was dry and then it made a massive scone, it was way too big for 1 person. Thinking perhaps I’d made a mistake, I made another and same thing happened.
    When I started thinking about it, 1/2 cup is a lot of flour for a single serve when most 12 scone recipes call for 2 cups.
