Make it for Mum: Chicken Pie & Shortbread Dessert

Are you wondering what to put an order in for Mother’s Day lunch? Or perhaps what to make for your own Mum? I searched high and low {ok, I lie – I just looked in Jamie Oliver’s 30 minute meals for inspiration} and found the perfect meal for Mother’s Day: Chicken pie and shortbread, strawberries and cream.

Chicken Pie
4 chicken breasts
a knob of butter
a bunch of shallots
150g button mushrooms
1 tbs of plain flour
2 teaspoons of English mustard {I used wholegrain mustard}
1 heaped teaspoon of creme fraiche {you can use cream if you like}
300ml chicken stock
a few sprigs of thyme
1 sheet of butter puff pastry

Method
♥ Slice the chicken into 1cm strips
♥ Put 1 tbs of olive oil and the knob of butter into a hot frypan
♥ Add the chicken and cook for 3 minutes
♥ Slice the shallots and mushrooms and add to the pan
♥ Add 1 heaped tablespoon of plain flour, and stir
♥ Add 2 teaspoons of mustard, 1 tablespoon of creme fraiche and 300ml of chicken stock. Stir well.
♥ Pick the leaves off the sprigs of thyme and add to the pan
♥ season with salt and pepper
♥ Transfer the chicken mixture to an overproof dish slightly smaller than the sheet of pastry
♥ Cover the filling with the pastry sheet, tucking it in at the edges
♥ Put in the oven and cook for 15 minutes
♥ Serve with steamed peas and carrots {or Mum’s favourite vegetables!}

This dessert is easy that the little kids can take complete credit for all of it. Just chop the strawberries and let them piece it together.

Shortbread, Strawberries and Cream
punnet of strawberries, hulled and halved
walker shortbread biscuits
double cream
1 heaped teaspoon of icing sugar
1 teaspoon of vanilla extract

Method
♥ Mix the cream, vanilla and icing sugar together in a bowl
♥ In small serving bowls place the cream. Place one biscuit in each bowl. Top with strawberries.
♥ Enjoy. x
