Greek Meatballs With Yoghurt Dip

How is life treating you? I hope the new year is going well so far. Things here are good. We have so much on, that I feel like I’m going to be hardly home for any of January. Hubby is stepping up into a higher position at work and can’t take any time off, so it’s me and the girls gallivanting around, dragging my sister and mum along when I can.

One thing I have to focus on at the moment is upping my iron levels, especially with all that I’ve got going on. I’ve been getting regular iron infusions, but I need to increase red meats and other sources of iron, as well as taking supplements daily. Oh boy, I’m so bad at remembering to take supplements each day.

I’m a bit weird with meat, and I go through stages where I’m okay with it, and others where I’m on the verge of being vegetarian… I’m weird I know. I find the easiest way to eat meat is by using mince. It’s affordable too, and I can make a mean meatball or two.

These are so flipping good. I love these with their yoghurt dip. You could use lamb mince if you liked, but I find it hard to come by sometimes and beef mine works beautifully here.

Greek Meatballs With Yoghurt Dip

GREEK MEATBALLS WITH YOGHURT DIP

INGREDIENTS

2 slices of white toast, torn into chunks
500g beef mince
1 onion finely chopped
1 egg
2 tbsp of fresh lemon juice
2 tbsp chopped parsley
2 tbsp chopped mint
plain flour, to dust

Yoghurt Dip
1 cup natural Greek yoghurt
2 tbsp chopped mint
2 tbsp olive oil

METHOD
♥ In a small bowl, soak the toast and cover with cold water. After a few minutes drain and squeeze it dry. In a medium bowl, place the mince, toast, onion, egg, lemon juice, parsley and mint. Combine throughly and season with salt and pepper.
♥ Cover the bowl with plastic wrap and place in the fridge for an hour.
♥ To make the yoghurt dip: Combine the yoghurt and mint into a msall bowl, season with salt and pepper and then place in the fridge until your meatballs are finished.
♥ Roll the mince into small balls, and toss in a little bit of flour. Heat oil in a large frying pan, and cook the meatballs for 10 minutes, turning over to make sure they’re browned all over and cooked through. Serve meatballs with the yoghurt dip.
