Food as gifts: Choc chip shortbread

Over this past month I’ve been sharing a few different recipes for food to make as gifts, because who doesn’t love to indulge in good food this time of year?

This recipe is easy to make. Super easy. Just throw it all in the food processor or Thermomix and you’re almost done!

Ingredients

220g chilled unsalted butter, chopped
2 cups plain flour
1/2 cup rice flour
2/3 cup caster {superfine} sugar
1 teaspoon vanilla extract
1 egg
200g dark chocolate, chopped

Method

♥ Preheat the oven to 160 degrees celcius. Prepare a slice tin by lining it with baking paper.
♥ Place the butter, plain flour, rice flour, sugar, vanilla and egg into a food processor or Thermomix and process for 3-5 minutes or until the mixture starts to come together.
♥ Lightly flour a clean bench space and turn the dough out onto it. Knead gently, and then add the chocolate in and knead a little more until combined.
♥ Press the mixture into the prepared tin and smooth over. I use the back of a clean spoon for this.
♥ Use a sharp knife to score the top into long bars. This makes it easier to cut once cooked. Prick with a fork as well.
♥ Bake for 40-45 minutes or until the top is lovely and golden.

  1. Yum these look like little pieces of heaven!
    I would love to bake something to give as gifts but my baking stills are a bit hit and miss and Id hate to bake something that turned out terrible and the poor person had to pretend to like it!

  2. Sorry – American here with a slightly silly question: what size is a slice tin? I want to make sure I use something roughly equivalent so the baking time is about the same. Thanks! (And I’m so excited to make these. Chocolate and shortbread is the best combination!)
