Falling in love with my Thermomix & pretty darn good choc-chip cookies

Pretty darn good Thermomix choc-chip cookies

Do you know anyone that has a Thermomix? Those people are passionate, lovers of the machine. I say that in the kindest way possible. I love that they love it and use it. I have tried, and I’ll admit I’m getting better… but I actually find it therapeutic to chop and stir things sometimes.

I do love when I’m making something that it’s pretty stress-free and my kitchen is pretty much mess-free. That I love.

I dared myself to fall in love with my Thermomix this month, because our relationship has been strained. We’re not at the stage where we’re going to break up, but we have had some extended time apart and it’s not healthy for either of us {you know I’m still talking about me and the Thermomix here, right?}.

You know what I partly think it is? I don’t like being told what to do. And with the Thermomix, unless I’m blending the bejeezus out of something, I have to follow a recipe to a tee. And that kinda gets on my creative nerves. Perhaps if I play with it more I won’t be so scared to set my own speeds and temperatures and cooking times.

So, as I was saying… I dared myself to fall in love with it. I’m just going to do a recipe a day, starting today for the whole month of July. I’ll share them on Instagram, and the recipe here {with where I got the recipe from too, of course}. First up, these cookies which were pretty amazing. Recipe from Make It Perfect.

Pretty darn good Thermomix choc-chip cookies

Thermomix Choc-chip cookies

Ingredients

125g butter {I used salted and left out the salt in the recipe}
110g white sugar
110g brown sugar
1/2 tsp vanilla
1 egg
1/2 tsp salt
260g self-raising flour
150g choc-chips

Method

♥ Place butter, sugars and vanilla in the Thermomix bowl. Cream together for 1 min on speed 3-4.
♥ While the Thermomix is still running, add the egg through the hole in lid and continue mixing on speed 3-4 for 30 seconds.
♥ Add flour and salt, and knead on interval speed for 30 seconds.
♥ Add chocolate chips, and stir through with spatula.
♥ Make tablespoon size balls and place on a tray lined with baking paper. Bake for 12-15 minutes at 180 degrees Celsius or until golden.

Note: You can easily make this recipe without a Thermomix. Just use a bowl and beaters. Easy!

  1. My husband refers to mine as the world’s most expensive slushy, green smoothie maker. Saved up for one after 2 kids diagnosed Celiac. I do love it but not as inventive as I would like. Resolved to lift my game this school hols so can’t wait to read more. thanks!

  2. That’s exactly why I can’t commit to one… I enjoy the cooking process too much, and I never follow a recipe! But the no mess, less fuss thing is very tempting!

  3. I made these last night! I actually left out the white sugar and they were still super sweet. I am loving your blog atm. I just bought a thermo, but, like you, I like to be creative so I will see how it goes. I have decided to just pace myself, I don’t want to get thermo burn out and then never use it again!

  4. Baking these now. I’m one of those weirdo’s that loves their thermo 🙂 I do all sorts with it. Make as much from scratch as I can, and that’s quite a lot. Saves me money and time, and we don’t get to eat all the crap that processed food is full of 🙂

  5. Made these last night! Super easy but super sweet! Next time I will leave out the white sugar (just use the 110g of brown sugar) – but still a winner in this household!
