Easter Bunny Cupcakes Recipe

Easter is a special time of year for us. We’re not overly religious {or religious at all really} but it’s always a nice time to get the family together, enjoy each others company and good food. This year Lacey’s birthday falls on Easter Sunday, so it will make the Easter weekend even more special for us.

I made these bunny cupcakes with the girls, and they turned out way better than I imagined. I am not great when it comes to having an attention to detail and I worried they’d come out looking more like mice than rabbits, but I’m pretty darn proud of the end result. I only made the bunny faces, but the magazine has cute bunny tail decorations to make too. You can find them in the latest Coles Baby & Toddler Magazine which is free in your local store or in the
App store.

Sweet Easter Bunny Cupcakes

All the bits and pieces are sourced from Coles, in the baking section or confectionery aisle. I keep a box in the pantry with all cake decorating stuff, which is handy if you ever get an urge to bake and decorate. The kids love rifling through it.

Sweet Easter Bunny CupcakesIf you want to make them for Easter, or a pre-Easter party, here’s the recipe:

Ingredients

125g butter, softened
1 cup caster sugar
2 free fange Eggs
1 1/2 cups plain flour
1 tsp baking powder
1/2 cup milk
1 cup desiccated coconut
18 white marshmallows
Coles Brand Pink & White Decorating Hearts
2 pink marshmallows {I used the mini baking marshmallows instead}
12 pink M&M’s Minis {I used other hard shell chocolates found in the baking section at Coles}
Queen Black Writing Icing, to decorate

Buttercream Icing
125g butter, softened
3 cups icing sugar mixture
1 tbs milk
1 tsp vanilla essence

Method

♥ Preheat oven to 180℃. Line twelve 1/3 cup capacity muffin pans with paper cases. I used the hard muffin cases {pink & white striped} from the baking aisle instead.
♥ Use an electric mixer to beat the butter and sugar until pale and creamy. Add the eggs, 1 at a time, beating well after each addition. Combine the flour and baking powder in a bowl. Add the flour mixture and milk, in alternating batches, to the butter mixture, stirring with a wooden spoon until just combined.
♥ Spoon the mixture evenly among the paper cases and smooth the surfaces. Bake for 20 minutes or until a skewer inserted in the centre comes out clean. Transfer to a wire rack to cool completely.
♥ To make the icing, use an electric mixer to beat the butter until very pale. Gradually add the icing sugar, in batches, beating well after each addition. Add the milk and vanilla and beat until combined.
♥ Place the coconut in a small bowl. Reserve 1 tablespoon of the icing. Spread the remaining icing over each cake. Dip the top of each cake in the coconut to lightly coat. Cut the white marshmallows in half. Place 2 marshmallow halves, cut-side down, on half the cupcakes to create feet. Using a little of the remaining icing to stick, arrange pink decorating hearts on the feet to create paw pads. Top 6 marshmallow halves with icing and dip in coconut to create cotton tails. Place on the cakes above the feet.
♥ Cut pink marshmallows in half, then cut each half into quarters. Place on the remaining white marshmallows for ears. Arrange on the remaining cakes. Decorate with M&Ms for noses, hearts for mouths, and use the black icing to create a face.

My other favourite things to do at Easter:

♥ The obligatory Easter Egg Hunt. My sister and I chocoholics, and we don’t mind that we’re raising children of the same nature. We’re also big kids, so we’ve planned and prepped {eggs and bunnies have been purchased!} ready for the hunt. These are our favourites for hiding.
♥ We’ve also got the bunny baskets for holding the found eggs. Kids’ hands are like little ovens, so if you don’t have something for them to put them in you end up with melted chocolate EVERYWHERE. We have the pink one in the picture above, and a colourful basket {below, both from Coles}, and then another we’ve had in the family for a while.

♥ Sitting back and enjoying a toasty hot cross bun, with lashings of butter, knowing that it’s about 10 or so months before you can indulge in one again. {Psst. Coles even have apple and cinnamon hot cross buns that you should probably try too}.

  1. We’re flying by our seats of our pants this Easter but I do know that there will be chocolate! I really wanted to try and make my own Hot Cross Buns this year but I was beaten by the clock, so I caved and bought some from Coles. I love that they do a fruit free version which means even the hubster can enjoy them!

  3. Super cute! I hit the hot cross buns too early this year so I’ve had a bit of a break and looking forward to enjoying them again at Easter. Happy birthday to Lacey! Maybe you could do a birthday present hunt for her also!
