Chopped salad: The one where you empty your crisper and chop it up

Well, it’s not quite as the title suggests. I certainly don’t want you just emptying your crisper and thinking it makes an ace salad. We all have varying degrees of quality lurking in our fridges. I will wear my halo and let you know I do a market shop for most of our fruit and vege and it gets a clean out on Saturdays, so my crisper gets a tick of approval. But what I am suggesting is that this salad works well with what you’ve got, and all you have to do is add three special ingredients to make it perfection; chickpeas, mint and coriander. The ingredients I’m suggesting are below are what I think works best, but if you don’t have something, don’t fret!

Ingredients

A handful of rocket, chopped
A punnet of cherry tomatoes, chopped
Spring onions, chopped
1 red capsicum, chopped
1 avocado, chopped
1 carrot, chopped
1 large cucumber, chopped
1/2 cup mint, chopped
1/2 cup coriander, chopped
1 can of chickpeas, drained and rinsed

Method

♥ Place all ingredients in a bowl. Mix to combine. Add dressing, and toss again.

Dressing

In a small bowl add the juice of half a small lemon, 1 minced garlic clove, 1 tablespoon Dijon mustard, 1/4 cup apple cider vinegar, 1-2 tablespoons raw honey, 1/3 cup extra-virgin olive oil, and salt & pepper, to taste. Stir to properly combine.

Fess up, what’s the state of your crisper right now? And don’t lie, I might just pop over and check!

    I just moved house on Friday and bought a brand new, shiny fridge so my crisper is perfectly clean (and sadly lacking in food!). Let’s see how long that lasts though!

    It’s not looking too bad right now – some kale that’s been in there for a while that will have to be used in my stir fry. Definitely would have all the ingredients for this salad if only my herb garden could survive!

    Crisper salads is about as creative as I get in the kitchen, but they are nearly always a big hit! My crisper is surprisingly full and crisp, end of holidays refresher last week!

    How good is this salad?????? Ive been having this for most of the summer and its seriously GOOD! Its so easy to make, each day there is a slight variation (as you said according to crisper contents…and quality). I sometimes swap the chickpeas for mixed beans, or brown lentils, even cows cpus or quinoa -just to mix it up a bit and its delish with some sprinkled feta or goats cheese on top. Nuts too go so well. Herbs are a must, and Im lazy and usually just squeeze lemon juice as my dressing. Ive never been a lunch person but this salad is great and best of all, I find I’m not craving my children’s leftover biscuits mid afternoon…Im actually making it through until dinner. Its good to know something that tastes good is also healthy and easy to make! Happy mama!!xx

    Oh we love salad in our house! My crisper is actually my vegetable garden and it’s in a pretty good state :) Come round and visit anytime (I’d send you home with a goody bag)! Nothing better than fresh veggies.

    When I was in New York they had chopped salad and I thought it was totally unessessary but when I actually had it it was AMAZING!
