Chocolate Fudge Bars.

 

Hubby set off on a work thing on the weekend, and I wanted to send him off with some goodies for the road. So Saturday night I whipped up these chocolate fudge bars, which I know he’s enjoyed in the past. I actually used to make them a lot for school events when I was nannying, because I found we always had the ingredients in the house… and it’s too easy {and delicious}.

 
Sadly for Hubby, he forgot to take them with him… so they were left for Lacey and I to enjoy. He did enjoy a few before he left, and we wrapped some up for Gaga {grandma} to enjoy too.
 
 
Ingredients
1 cup plain flour
1/2 cup sugar
1 cup coconut
1 tablespoon of cocoa
185g butter, melted
1/2 teaspoon vanilla
 
 
Method
Place dry ingredients in bowl. Add melted butter and vanilla. Mix.
Press into a small lined tray. Bake at 180 degrees celcius for 20 minutes. Allow to cool.
 
Once cool, ice with chocolate icing {1 cup icing sugar, 2tbs cocoa, 30g melted butter, 1 tbs hot water} and sprinkle with coconut.
 
Enjoy in moderation {if you can resist!}. xx

  2. We made these exact choc fudge bars this morning … How Funny!! Now the only decision for me is whether I eat dinner or just eat these with a cup of tea … bit cheeky and not very healthy but oh so yummy!

  4. Oooh thanks for reminding us of this recipe! I remember it being a staple growing up! Echoing other commenters, I was looking in my cupboard to see what I could whip up (I was thinking chocolate lava cakes, but I only had cocoa, no actual chocolate) and these fit the bill perfectly! They are cooling on the bench now……

  5. HAHAHA This is an old family recipe to me as my nan always (and still does) make these, although she does call her choc coconut slice.

    However I have substituted the normal sugar or caster sugar for brown sugar. it tends to make the mix more soft and gooey in some cases but still an awesome recipe none the less
