Carol’s cookies: Pretty much the easiest biscuits in the world

My sister and I had quite the debate the other day, well by debate I meant quiet conversation while munching on some high tea goodies. I was salivating over the details of how good cake is. I haven’t met a cake I didn’t like {except for this one time I went to my Aunt’s house when I was 8 and she made one with ginger. I ate it, and pretended I liked it – just to keep her happy}. My sister, on the other hand, likes cake but doesn’t love it. She’s more of a cookie fan. She can’t get past that crunch or chew and the goodies within.

To be honest, I’ll take either. I don’t want to discriminate.

And because it seems to be on topic, I’ve actually {just this minute} returned from my neighbours house where she made cookies. You might remember Carol from the Pav Off. I’m a big fan of cheaty shortcuts that make life easier and a little bit fun. And as we know, I’m a big fan of all things delicious. So I sampled the cookies, and loved them. Carol tells me that they’re the easiest biscuits to make and shared her secret {well not so secret now} recipe.

Ingredients

1 packet of vanilla or butter cake mix {just get the cheap one homebrand/black & gold – you know the ones that don’t even come in a box?}
1/3 cup canola oil
1 egg
Whatever flavour you want to add – choc chips, ginger, white chocolate, nuts, jam on top etc

Method

♥ Preheat your oven to 180 degrees celcius. Line a tray with baking paper.
♥ Combine all the ingredients in a bowl and mix well. Place walnut size balls onto a tray and cook for 10-12 minutes, or until golden brown.

Note: You can use a chocolate cake mix if you like, it’s just harder to tell when they’ve cooked properly.

  1. Cake. or maybe biscuit (being an old Aussie I prefer biscuit to cookie). Can’t decide… but I do love a good high tea and will devour it all.
    Are scones cake or biscuit?

  2. Biscuits. Ones that are actually still called biscuits in recipes. Crisp and thin and lovely. Which means I’m still using the green and gold cookbook from 1950! Although it’s safe to say I’m probably never going to attempt an Ammonia Biscuit…

  3. One of the girls from work passed this recipe around we have all done it many ways it’s excellent .i personally love hummingbird cake or really good homemade carrot cake yum

  4. ah – yum! Of course you have to post this when I’m trying so hard to avoid sugar. And I even have one of those fabulous home brand butter cake mixes in the pantry. It’s like the stars are aligning & instructing me to give in…
