Brunch with friends: Raspberry & white chocolate muffins

Back in High School I met my best friend. It was behind the hall and it was 1993. Physically she was everything I wasn’t, tiny and petite and beautiful. I was tall, frumpy and was wearing the platform shoes that were so very popular back then. We hit it off.

In an ideal world, I’d love to live near each other so our kids could grow together and we could share dinner-cooking duties for our kids and meet at parks to play. The truth is there is a whole state between us, somehow after all these years geography has kept us apart. Our lives have mirrored each others paths. We fell in love at the same time, married around the same time and then had kids at the same time too.

Over Christmas we spent a morning together. The kids played. We hung out. It was like old times, except we’ve aged and have two little people each running around distracting us. Who would have thought that those two high school kids would grow up to be mamas? Eh?

These muffins were on the menu that morning. I also made them on Christmas morning. I don’t know what makes them so good {perhaps it’s the cream?} but they’re definitely worth trying.

RASPBERRY & WHITE CHOCOLATE MUFFINS

Ingredients

3 cups of self-raising flour
1 cup caster sugar
250g white chocolate chips
125g butter, melted
1 egg
1 cup milk
1/2 cup cream
1 teaspoon vanilla essence
200g frozen raspberries

Method

♥ Preheat oven to 200 degrees celcius. Line a muffin tray with 12 liners.
♥ Place flour sugar and white chocolate in a bowl. Add the better, egg, milk, cream and vanilla. Mix well with a wooden spoon.
♥ Add in the raspberries. Gently mix. You don’t want to over mix all you’ll turn the mix a pinky/grey colour.
♥ Bake for 25 minutes.

  1. Yum. I will definitely be giving these a try. I do have a best friend from school but she lives far away whom I was lucky enough to catch up with before Christmas.

  2. Oh I love that! My best mate and I so similar. We met when we were 9 and I was the tall frumpy one in chunky shoes and she was the cute petite one. These muffins look RIDIC!!!!

  3. Yum! Raspberry and white chocolate muffins are the bomb! I have a similar recipe that I’ve converted to the thermie. There might be a healthier muffin combo than this, but I’m sure there isn’t one that is as yumbolicious! Me and my mate became besties when we were 3. We looked so cute as we both looked so similar with blonde hair and blue eyes, except I was the chunky monkey and she was the skinny minny. Everyone used to think we were sisters. Now, she’s a whole world away but when we do get together, it’s just like old times.

  5. I met my best friend at high school and now I live in Melbourne and she’s in sunny Los Angeles. Its hard being so far away but I too got to spend a lovely weekend with her just before Christmas where she hung out with my little girl and they too became best friends. I miss her all the time.

  6. I met my best friend over 30 years ago when I was doing a geriatric nursing certificate. She married my then husbands best friend (we introduced them)…their marriage survived, ours did not and funnily enough my ex husband decided he didn’t want to be friends with her husband either. She has been a rock in my life and I honestly don’t know what I would do without her. She lives 6 hours drive away from me but with the wonders of social networking it seems like she is just next door!!! When we see each other it’s like we have never been apart and we just pick up where we left off. She has been there for every major milestone (good and bad) in my life as I have in hers. We are both on a weight loss challenge this year (supporting each other through a secret facebook group) and when we reach our goals we are off to Tasmania for a girls getaway.

  7. I met my best friend at the early age of 5 in our kindergarten class. However, we didn’t really become best friends until our late high school years. I was nerdy/not-so-popular one and she was the outgoing, pretty one. Somehow during high school, our paths connected and ever since then, we’ve been inseparable. We went to the same catholic school, high school, and college…yes, that’s over 10yrs of studying together. She married at 21 and is currently about to celebrate her 10yr anniversary; while I’m still living the single life. However, despite those minor differences, we still remain in sync in so many aspects of our lives. Not only is she my best friend, she is a part of my family, as I am a part of her’s. In 2012, she was blessed with a beautiful son, who I am so honored to call my Godson. I’m lucky that we live in the same state and are only 15mins away from each. Being big Grey’s Anatomy fans, we frequently claim the phrase “she’s my person,” because it’s true. My best friend knows every single detail about me & vice versa, so should I need her for anything I know I can call upon her, and same goes for her, if she were to need anything, I would be there for at the drop of a dime, because of who she is to me…my best friend, my family.
