The Best Salad In The World : Haloumi and Pomegranate Salad

I don’t want to be bossy and tell you what to do, but I think I’m about to. YOU HAVE TO TRY THIS SALAD.

Oh gosh, I AM so bossy but it really is the best salad in the world. And whenever I say those words in my head, I hear the words to that Jack Black {Tenacious D} song, ‘the best song in the world’. Sing it with me, “It’s the best salad in the woooorld”.

And I’m not fibbing. It IS the best salad in the world. I’ve shared the recipe with a few friends recently, and it’s been a huge hit with them, and then they’ve shared with their friends, and it’s gone on this journey of making people all over fall in love with it.

Usually when I make a recipe here on my blog, I’ll put the ingredients in the title, but I wanted to simply call it the best salad in the world, because it was worthy. So when you read through the ingredients I don’t want you start thinking – pomegranates? Too hard. Or fennel, too aniseed-y. When all of these ingredients come together, they’re just salad harmony. You can buy pomegranates in a small container, for your convenience, in the fruit and vegetable section of your supermarket. Or in the frozen section. You with the fennel you want to slice it nice and thin. Lastly, when it comes to haloumi… I love a brand called Olympus {not the camera, but the cheese brand} which makes an awesome haloumi with mint through it. You can get it from various delis and fruit shops. I buy up big whenever I find it. Otherwise the Alambra brand at Woolworths is really good too. I slice mine about half a centimetre thick.

HALOUMI AND POMEGRANATE SALAD

Ingredients

1 tbs lemon juice
2 tbs light olive oil
75g pomegranate pulp
1/4 cup mint leaves
2 shallots, sliced thinly
150g baby rocket
1 small fennel bulb, sliced thinly
400g haloumi, sliced

Method

♥ Cook the haloumi in a frying pan with a little oil, until brown. Cool slightly. Place everything into a bowl and mix to combine. Enjoy!
