Bake me happy: Coconut & passionfruit slice

There are things you learn in adulthood, and there is one thing I’ve learned about having a well-stocked pantry: one should always have a can of condensed milk lurking in there somewhere. Darling.

Because you never know when you might want to whip up a huge batch of cookies, crack open the can and dip in with a spoon {saved only for the most calling of times – break-ups, bad days and such} or this passionfruit and coconut slice.

Bake me happy: Coconut & passionfruit slice

Ingredients

1 cup self-raising flour
1 cup dessicated coconut
1/2 cup caster sugar
100g butter, melted
1 x 395g can of sweetened condensed milk
Juice of 1 lemon
2 tbsp passionfruit pulp

Method

♥ Preheat your own to 180°C. Lightly grease a 20cm x 20cm square tin and line with baking paper.
♥ In a medium-sized bowl combine the flour, coconut, sugar and melted butter. Mix together and then press into the tin. To smooth it over use the back of a metal spoon. Bake for 12 minutes, until golden brown.
♥ While the base is cooking, mix together the condensed milk, lemon juice and passionfruit pulp in a bowl. Pour onto the slice, once it’s cooked {it doesn’t matter if it’s hot}. Bake for 15 minutes until just firm.
♥ Set aside to cool and then cut into squares once cool enough.

  1. Thanks for this yummy recipe! I wanted to bake something this morning and this will be perfect! I always have white chocolate chips and dried cranberries in my cupboard! Love the combination of the two and there are endless things you can make with them… especially with Christmas coming up!

  2. Now I just MUST try this out! I’ve never used condensed milk, it’s not really a big thing over here, but I keep seeing it in new recipes more often these days.. today is grocery shopping day, so I’ll add these ingredients on my shopping list 🙂
