Apple, oat and sultana muffins

Hello.

Did you have a nice weekend? We went camping for the first time as a family. We’ve camped before, just Hubby and I, but this was the first time with kids. I’ll share more about it later on, but it was fun. The weather didn’t play nice for most of it, but I’ll eventually forgive it. I’ll just have to give it the silent treatment for a while.

I’ve learned in life there are there are two types of people in the world; those who like fruit in their food and those that don’t. For example my sister would never eat these muffins. She doesn’t do hot cross buns or anything with sultanas in them. My friend Carly explained to me over lunch the other day that fruits does not belong in food. She passionately explained that sultanas in savoury food is just not on.

But I kinda like it. I love chewy, dried-fruity anything. I’m hoping to raise Luella to be the same {I fear I didn’t start Lacey early enough and she now sits on the fence, sometimes she’ll jump in and others she’ll turn up her nose}.

Apple, oat & sultana muffins

Ingredients

2 apples {Granny Smith work well but use what you have}, washed and grated {If you have a Thermomix – wash, quarter and chop in machine on speed 5 for 3 seconds}
1 cup rolled oats
3/4 cup of sultanas
1 1/2 cups of self-raising flour {if you have wholemeal use that, or half white, half wholemeal}
1 tsp baking powder
1/4 cup sugar
2 eggs
1 cup milk
1/4 cup melted butter

Method

♥ Preheat oven to 180 degrees celcius. Line a 12-hole muffin tray with papers.
♥ Mix all dry ingredients into a bowl. Add wet ingredients, and mix to combine. Add apple and mix until just combined.
♥ Pour mixture into muffin papers evenly, and cook for 25 minutes or until golden.

  1. I love love LOVE fruit in my food however I can’t do alcohol on my food, like at Christmas – Rumballs & Triffle. Yuk!

  3. These came out kinda dry for me. Not sure if I did something wrong but they were just an odd texture plus they were done cooking in about 15 minutes for me. I have fan forced oven though so maybe that was the reason???
