Although there are a few things I miss about having dairy, it’s probably one of the easiest food groups to miss out on {says she who knows she won’t have to be without cream/cheese/ice-cream forever}. We still have goat’s milk so it’s easy to find substitutes. This week I picked up some goat’s milk fetta and haloumi from the markets. Alas, last night Hubby was whipping up the haloumi and spotted the price I paid for it {which I honestly didn’t realise because I was too busy chatting to the goat guy} and he almost lost his mind, “You paid $16 for THIS?”
“Did I? I must have? Eeek. We better enjoy it then…”
I don’t think we’ll be enjoying that haloumi again for a while.
I do miss ice-cream though and I haven’t been brave enough to try soy substitutes. Hubby’s workmate told him about this recipe, so I made it. Loved it. Ate it. Made it again. Loved it some more.
Ingredients
4 bananas, peeled & frozen
A handful of macadamias
1 teaspoon of cacao {or cocoa if you don’t have any}
Method
♥ Place everything in a blender and whiz it until it’s cream and smooth.
♥ Eat straight away.

Quirky Cooking has heaps of dairy free dessert recipes on her page, and I noticed on another (might have been NNAM or NNM) just whirl handful macadamias, frozen mango/pineapple/banana – whatever you feel like, with some frozen coconut milk or cream in Thermomix – yum!!
