3 ingredient: Instant dairy-free banana & macadamia ice-cream

Although there are a few things I miss about having dairy, it’s probably one of the easiest food groups to miss out on {says she who knows she won’t have to be without cream/cheese/ice-cream forever}. We still have goat’s milk so it’s easy to find substitutes. This week I picked up some goat’s milk fetta and haloumi from the markets. Alas, last night Hubby was whipping up the haloumi and spotted the price I paid for it {which I honestly didn’t realise because I was too busy chatting to the goat guy} and he almost lost his mind, “You paid $16 for THIS?”

“Did I? I must have? Eeek. We better enjoy it then…”

I don’t think we’ll be enjoying that haloumi again for a while.

I do miss ice-cream though and I haven’t been brave enough to try soy substitutes. Hubby’s workmate told him about this recipe, so I made it. Loved it. Ate it. Made it again. Loved it some more.

Ingredients

4 bananas, peeled & frozen
A handful of macadamias
1 teaspoon of cacao {or cocoa if you don’t have any}

Method

♥ Place everything in a blender and whiz it until it’s cream and smooth.
♥ Eat straight away.

    Yum!

    This is awesome. My Vicklets think ice-cream is the shiz. I think the sugar highs are the pits so this sounds like a win win! Thanks

    That would amazing with a drizzle of Baileys or coffee liqueur over it.

    Yum! I love that you don’t need an ice-cream maker for this! I’m not dairy-free but will happily eat this!!! :-)

    I LOVE banana ice cream. My friend introduced me to it years ago. So perfect for summer!

    Quirky Cooking has heaps of dairy free dessert recipes on her page, and I noticed on another (might have been NNAM or NNM) just whirl handful macadamias, frozen mango/pineapple/banana – whatever you feel like, with some frozen coconut milk or cream in Thermomix – yum!!

    Cool I am lactose intolerant and will make this for sure!
