What is the lemon juice for?
I think it might stop the oxidisation, but help give it that yummy slight caramelisation.
Ooh, I love banana chips but it never occurred to me to make my own! As soon as I move this is on the list for making!

I actually don’t know. I kept mine for 7 days before finishing them off. I just kept them in an air-tight container. x
Store purchased ones generally contain sulphites as a preservative which may explain the headache you always got as a child. I had the same thing happen to me 😀 sounds delicious. I’ll have to give them a go!

I LOVE banana chips but find the store bought ones too sugary. Hello cheap and easy uni snack! I’ll be making these tonight I think with the browning bananas on the fruit bowl tree!

If you have a dehydrator (we have the $30 or $40 one from Aldi) then you can just slice the bananas and whack them in there without anything extra. Depends on how humid it is as to how long they take to dry but they’re so yummy. We also dehydrate strawberries (oh, wow, so sweet!), apple slices, tomatoes, whatever you can think of. 🙂
I wonder if you could sprinkle a little sugar on them too…. hehe not as healthy but would make them even more caramelly (is that a word… it is now)
As I type this I realise that my sweet tooth is probably the reason I am festively plump 🙂
